Heat the vegetable oil in a pan. Fry the peanuts until crisp, then remove and set aside.
▢
Fry the whole shallots and garlic until fragrant. Remove and set aside.
▢
Briefly fry the dried chiles, then remove.
▢
Add all the fried ingredients to a blender. It is fine if they still have a little oil on them because the oil helps make the sauce glossy.
▢
Add salt, brown sugar, tamarind water, and a little hot water. Blend coarsely, but not too fine.
▢
Taste and adjust the seasoning as needed. Serve with satay or your favorite grilled meat.
