  • 2-5 chilies, dried
  • 5 medium shallots, peeled
  • 2 cloves garlic
  • 1 tsp dried shrimp paste, or to taste
  • 1-2 tbsp brown sugar
  • 1-2 tbsp tamarind juice
  • salt, to taste
  • cooking oil, as needed

Directions

  1. Heat the vegetable oil in a pan. Fry the peanuts until crisp, then remove and set aside.
  2. Fry the whole shallots and garlic until fragrant. Remove and set aside.
  3. Briefly fry the dried chiles, then remove.
  4. Add all the fried ingredients to a blender. It is fine if they still have a little oil on them because the oil helps make the sauce glossy.
  5. Add salt, brown sugar, tamarind water, and a little hot water. Blend coarsely, but not too fine.
  6. Taste and adjust the seasoning as needed. Serve with satay or your favorite grilled meat.
