There is a lot of savory depth to this homemade peanut sauce, with notes that are rich and nutty and just a touch of spice. It is an easy stovetop affair that goes down well with rice bowls or as an accompaniment to skewers, grilled meat and chicken satay. The result is a coarse, glossy concoction in which fried peanuts, tamarind juice, brown sugar, shrimp paste, dried chiles, garlic and shallots all meld into one. You get the right measure of smoky, tangy, salty and sweet from it.

Ingredients
 
 

  • 1 cup peanuts
  • 2-5 chilies dried
  • 5 medium shallots peeled
  • 2 cloves garlic
  • 1 tsp dried shrimp paste or to taste
  • 1-2 tbsp brown sugar
  • 1-2 tbsp tamarind juice
  • salt to taste
  • cooking oil as needed

Equipment

  • 1 frying pan
  • 1 blender
  • 1 spatula
  • 1 slotted spoon
  • 1 measuring cup
  • 1 measuring spoon set
  • 1 small bowl
  • 1 serving bowl

Method
 

  1. Heat the vegetable oil in a pan. Fry the peanuts until crisp, then remove and set aside.
  2. Fry the whole shallots and garlic until fragrant. Remove and set aside.
  3. Briefly fry the dried chiles, then remove.
  4. Add all the fried ingredients to a blender. It is fine if they still have a little oil on them because the oil helps make the sauce glossy.
  5. Add salt, brown sugar, tamarind water, and a little hot water. Blend coarsely, but not too fine.
  6. Taste and adjust the seasoning as needed. Serve with satay or your favorite grilled meat.
