Lime Layer

  • 2 1/2 cups water
  • 1/4 cup granulated sugar
  • 50 ml fresh lime, juiced
  • 1 tbsp cornstarch
  • 2 to 3 drops green food coloring, optional

Vanilla Milk Layer

  • 2 1/2 cups water
  • 3/4 cup evaporated milk
  • 1/2 cup sweetened condensed milk
  • 1 tbsp vanilla extract
  • 1 tbsp cornstarch

  • 12 popsicle sticks
  • 1 spoon or small ladle

Directions

  1. For the lime layer, add the water, sugar, lime juice, cornstarch, and optional green food coloring to a saucepan.
  2. Whisk well until the cornstarch dissolves.
  3. Cook over low to medium-low heat, stirring often, until the mixture slightly thickens. Do not boil hard.
  4. Remove from the heat and let it cool slightly.
  5. Pour the lime mixture into popsicle molds, filling each mold about halfway.
  6. Freeze for 2 hours, or until the lime layer is firm enough to hold the next layer.
  7. For the vanilla layer, add the water, evaporated milk, sweetened condensed milk, vanilla extract, and cornstarch to a clean saucepan.
  8. Whisk until smooth, then cook over low to medium-low heat until slightly thickened.
  9. Let the vanilla mixture cool slightly before pouring it over the frozen lime layer.
  10. Insert popsicle sticks and freeze for 5 hours, or until completely firm.
  11. To unmold, run the outside of the popsicle molds under warm water for a few seconds, then gently pull out the popsicles.
