  • 1 tbsp minced garlic
  • 2 tbsp orange juice
  • 1 tsp salt
  • 1/2 tsp black pepper
Batter
  • 5 tbsp rice flour
  • 2 1/2 tbsp cornstarch
  • 2 1/2 tbsp plain flour
  • 90 ml water
Sauce
  • 1/2 tsp ginger powder optional
  • 1 tsp chili pepper powder
  • 50 g brown sugar or white sugar
  • 1 tbsp honey
  • 50 ml orange juice
  • 2 tbsp soy sauce
  • 4 tbsp vinegar
Starch Slurry
  • 1 1/2 tbsp cornstarch
  • 2 tbsp water

Method
 

  1. Cut the chicken breast into bite-sized pieces.
  2. Add the minced garlic, orange juice, salt, and black pepper. Mix well and let it sit for a while so the flavor goes into the chicken.
  3. In a bowl, mix the rice flour, cornstarch, plain flour, and water until smooth.
  4. Add the seasoned chicken into the batter and coat each piece well.
  5. Fry the coated chicken until golden and crispy. Remove and set aside.
  6. In a pan, add the ginger powder, chili pepper powder, sugar, honey, orange juice, soy sauce, and vinegar. Stir and bring it to a gentle simmer.
  7. Mix the cornstarch and water in a small bowl until smooth.
  8. Pour the starch slurry into the sauce and stir until it thickens.
  9. Add the fried chicken into the sauce and toss until every piece is nicely coated.
  10. Serve warm with rice and enjoy.
