Ingredients A (Sifted together)

  • 1 2/3 cup self-raising flour
  • 1/2 cup superfine flour
  • 3 tsp baking powder
  • 1/2 tsp salt

Ingredients B

  • 1/4 cup fine granulated sugar
  • 1/2 cup cold butter, diced

Ingredients C

  • 1/2 cup mixed dried fruits

Ingredients D (Beaten until soft)

  • 1/2 cup whipping cream
  • 2 tbsp lemon juice

Ingredients E

  • self-raising flour, for sprinkling

  • 1 flour sifter (or fine mesh sieve)
  • 1 kitchen scale
  • 1 measuring spoon set
  • 1 pastry cutter (or fingertips)
  • 1 round biscuit cutter
  • 1 baking sheet
  • 1 parchment paper sheet
  • 1 pastry brush
  • 1 oven
  • 1 cooling rack

Directions

  1. Combine Ingredients A and B in a bowl. Rub the mixture with your fingers until it resembles breadcrumbs.
  2. Add mixed dried fruits and stir well.
  3. Make a well in the middle of the mixture, then add beaten whipping cream. Combine thoroughly.
  4. Flatten the dough and cut out with a round biscuit cutter.
  5. Sprinkle self-raising flour on top of scones.
  6. Bake at 200°C for 9 minutes.
