Lime Popsicles are a refreshing frozen treat with a tangy lime layer and a soft vanilla milk layer. The first layer, the outer layer, has a bright, tangy lime flavor, while evaporated milk and sweetened condensed milk make the second layer creamy and smooth. Having cornstarch helps give each layer a slightly richer texture, so the popsicles freeze firm without feeling too icy. This would be great for hot days, summer desserts, family treats, or parties. It is a simple recipe made with basic ingredients.

Ingredients
  

Lime Layer
  • 2 1/2 cups water
  • 1/4 cup granulated sugar
  • 50 ml fresh lime juiced
  • 1 tbsp cornstarch
  • 2 to 3 drops green food coloring optional
Vanilla Milk Layer
  • 2 1/2 cups water
  • 3/4 cup evaporated milk
  • 1/2 cup sweetened condensed milk
  • 1 tbsp vanilla extract
  • 1 tbsp cornstarch

Equipment

  • 1 medium saucepan
  • 1 clean medium saucepan
  • 1 whisk
  • 1 measuring cup
  • 1 set measuring spoons
  • 1 citrus juicer
  • 1 popsicle mold set
  • 12 popsicle sticks
  • 1 spoon or small ladle
  • 1 freezer

Method
 

  1. For the lime layer, add the water, sugar, lime juice, cornstarch, and optional green food coloring to a saucepan.
  2. Whisk well until the cornstarch dissolves.
  3. Cook over low to medium-low heat, stirring often, until the mixture slightly thickens. Do not boil hard.
  4. Remove from the heat and let it cool slightly.
  5. Pour the lime mixture into popsicle molds, filling each mold about halfway.
  6. Freeze for 2 hours, or until the lime layer is firm enough to hold the next layer.
  7. For the vanilla layer, add the water, evaporated milk, sweetened condensed milk, vanilla extract, and cornstarch to a clean saucepan.
  8. Whisk until smooth, then cook over low to medium-low heat until slightly thickened.
  9. Let the vanilla mixture cool slightly before pouring it over the frozen lime layer.
  10. Insert popsicle sticks and freeze for 5 hours, or until completely firm.
  11. To unmold, run the outside of the popsicle molds under warm water for a few seconds, then gently pull out the popsicles.

Notes

Cornstarch helps give the popsicles a smoother texture and makes them less brittle after freezing. For the best flavor, use fresh lime juice instead of bottled lime juice.
