Preheat a deep fryer or oil to 160°C. Cut potatoes into wedges and soak in cold water.
▢
Drain potatoes and dry thoroughly with a clean kitchen paper.
▢
Deep-fry potato wedges for 10 minutes.
Drain on a wire rack over a tray to drain excess oil.
▢
Deep-fry potato wedges again for 3 minutes until crispy.
Drain on a wire rack. Sprinkle salt and chopped parsley when serving.
