Just potatoes, salt, parsley and oil are all you need for these wonderfully crunchy, and surprisingly cheap, potato wedges. Giving the wedges a bath in water first gets rid of a lot of the starch they have, and frying them not once but twice is the trick to getting them beautifully golden on the outside, yet lovely and soft inside. They're a breeze to get on the table for a quick snack, as something to munch on at a party, or a comforting addition to a meal with your preferred sauce for dipping.

Ingredients
  

  • 4 medium potatoes
  • 1 tsp salt
  • 2 tsp parsley chopped
  • oil for deep-frying

Equipment

  • 1 deep fryer
  • 1 wire rack
  • 1 tray
  • 1 kitchen paper

Method
 

  1. Preheat a deep fryer or oil to 160°C. Cut potatoes into wedges and soak in cold water.
  2. Drain potatoes and dry thoroughly with a clean kitchen paper.
  3. Deep-fry potato wedges for 10 minutes. Drain on a wire rack over a tray to drain excess oil.
  4. Deep-fry potato wedges again for 3 minutes until crispy. Drain on a wire rack. Sprinkle salt and chopped parsley when serving.
