Directions

  1. Preheat your oven to 400°F and grease or line a baking dish.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the vegetable oil, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, mix the melted butter and honey together.
  6. Pour the batter into the prepared baking dish and bake for 40 minutes.
  7. After 20 minutes, brush the top with half of the honey butter.
  8. When the cornbread is done, remove it from the oven and brush the top with the remaining honey butter.
