Method
- Preheat your oven to 400°F and grease or line a baking dish.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the vegetable oil, milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- In a small bowl, mix the melted butter and honey together.
- Pour the batter into the prepared baking dish and bake for 40 minutes.
- After 20 minutes, brush the top with half of the honey butter.
- When the cornbread is done, remove it from the oven and brush the top with the remaining honey butter.
