  • 1 citrus zester (or microplane)
  • 1 citrus juicer
  • 1 spoon
  • 1 set popsicle molds
  • 8 popsicle sticks
  • 1 freezer

Directions

  1. Add the canned coconut milk, sugar, lime zest, and fresh lime juice to a medium mixing bowl.
  2. Whisk until the sugar is fully dissolved and the mixture looks smooth and creamy.
  3. Taste the mixture. Add a little more lime juice if you want a brighter, tangier flavor.
  4. Pour the coconut lime mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Insert popsicle sticks into each mold.
  6. Freeze overnight, or for at least 8 hours, until completely firm.
  7. To unmold, run the outside of the popsicle molds under warm water for a few seconds, then gently pull out the popsicles.
  8. Serve cold and enjoy right away.
