There is a certain cool, tangy quality to these Coconut Lime Popsicles that puts the chill on. You simply need some decent coconut milk and the juice and fragrant zest of a fresh lime. They are as easy to put together in the freezer as they are to enjoy, the kind of sweet, citrusy thing you want when it is hot out. A single bite will give you the smoothness of the coconut with a little kick from the lime to back it up. Light and tropical, they have all the hallmarks of a proper homemade confection.

Ingredients
  

  • 1 can coconut milk
  • 1 cup granulated sugar
  • 1 tbsp lime zest
  • 1/4 cup fresh lime juiced

  • 1 medium mixing bowl
  • 1 whisk
  • 1 liquid measuring cup
  • 1 set measuring spoons
  • 1 citrus zester or microplane
  • 1 citrus juicer
  • 1 spoon
  • 1 set popsicle molds
  • 8 popsicle sticks
  • 1 freezer

Method
 

  1. Add the canned coconut milk, sugar, lime zest, and fresh lime juice to a medium mixing bowl.
  2. Whisk until the sugar is fully dissolved and the mixture looks smooth and creamy.
  3. Taste the mixture. Add a little more lime juice if you want a brighter, tangier flavor.
  4. Pour the coconut lime mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Insert popsicle sticks into each mold.
  6. Freeze overnight, or for at least 8 hours, until completely firm.
  7. To unmold, run the outside of the popsicle molds under warm water for a few seconds, then gently pull out the popsicles.
  8. Serve cold and enjoy right away.

Notes

  1. Use full-fat canned coconut milk, not a refrigerated coconut milk beverage, for the creamiest texture.
  2. Fresh lime juice gives the best flavor, but bottled lime juice can be used if necessary.
  3. If you prefer a less sweet popsicle, reduce the sugar to 3/4 cup / 150 g.
