This porridge is profoundly soothing, it's a dish that feels like a warm embrace on a peaceful morning. When a spoonful reaches your mouth, a delicate sweetness washes over you, calming and never too much.
The recipe’s loveliness lies in how the textures play with each other. It’s smooth and indulgently creamy because of the evaporated milk, and then there are those nice little chewy bits from the black and white glutinous rice, which cling to your spoon.
Pandan leaves run throughout with a light, almost flowery aroma - not strong, simply a mysterious and lovely suggestion of flavour that encourages you to have more.
