Bubur Pulut Hitam is a wonderfully comforting black glutinous rice porridge, a Malaysian favorite. It’s created with both black and regular white glutinous rice, fragrant pandan leaves, sugar, a pinch of salt, and evaporated milk. As it cooks, it transforms into a dessert porridge that’s both sweet, creamy, and satisfyingly thick, and it smells beautifully of pandan. The rice itself becomes soft and delightfully chewy. Best of all, because it’s done in a pressure cooker, it’s surprisingly easy to make for something that tastes so lovely, and is perfect for family get togethers, an afternoon cup of tea, or a soothing end to your meal.

Ingredients
  

  • 1 cup black glutinous rice washed and drained
  • 1 cup white glutinous rice washed and drained
  • 4 cup water
  • 3 pandan leaves torn and knotted
  • 1 cup granulated sugar
  • 1 pinch salt
  • 1 can evaporated milk

Equipment

  • 1 electric pressure cooker
  • 1 mixing spoon
  • 1 serving bowl

Method
 

  1. Place the black glutinous rice, white glutinous rice, water, and pandan leaves in a pot.
  2. Cover the pot and turn the knob to 'PRESSURE'. Press 'HIGH PRESSURE' for 30 minutes and 'ON'.
  3. When the pot beeps, turn the knob to 'STEAM' and release the pressure. When there is no longer any hissing, press 'OFF' and slowly open the pot lid.
  4. Press 'STIR FRY', then press 'ON'. Add granulated sugar, liquid milk, and salt.
  5. Stir until it boils for about 4 minutes. Press 'OFF'.
  6. Transfer to a serving bowl. Now the Black Glutinous Rice Porridge is ready to be served.
