Apple Filling

  • 8 apples Granny Smith or similar, peeled & sliced
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tbsp flour or cornstarch
  • 2 tbsp lemon or lime juice

Pie Crust

  • 1 1/2 sticks cold butter cubed
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 9 tbsp water ice-cold

Thickener & Finish

  • 2 tbsp cornstarch with a little water
  • 1/2 stick butter
  • egg wash 1 egg
  • sugar for topping

Directions

Prep the apples

  1. Toss sliced apples with sugar, salt, cinnamon, nutmeg, flour/cornstarch, and lemon juice.
  2. Let sit for 35 minutes to release juices.

Make the dough

  1. Mix flour, salt, baking powder, and sugar.
  2. Add cold butter and mix until crumbly.
  3. Gradually add ice water until dough forms.
  4. Shape into a disc and chill for 20 minutes.

Thicken the filling

  1. Drain the apple juices into a saucepan.
  2. Add cornstarch mixed with a little water and cook until thickened.
  3. Remove from heat, stir in 1/2 stick butter, then mix back with apples.

Assemble the pie

  1. Roll out half the dough and place in a greased pie pan
  2. Add apple filling
  3. Roll out top crust, cover, trim, and seal edges

Bake

  1. Brush top with egg wash and sprinkle sugar
  2. Bake at 425°F (220°C) for 20 minutes.
  3. Then reduce to 375°F (190°C) for 30 minutes.

Cool before serving

  1. Let the pie rest for at least 2 hours before slicing.
