Apple Filling

  • 8 apples, Granny Smith or similar, peeled & sliced
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tbsp flour or cornstarch
  • 2 tbsp lemon or lime juice

Pie Crust

  • 1 1/2 sticks cold butter, cubed
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 9 tbsp water, ice-cold

Thickener & Finish

  • 2 tbsp cornstarch, with a little water
  • 1/2 stick butter
  • egg wash, 1 egg
  • sugar, for topping

Directions

  1. Toss sliced apples with sugar, salt, cinnamon, nutmeg, flour/cornstarch, and lemon juice. Let sit for 35 minutes to release juices.
  2. Mix flour, salt, baking powder, and sugar. Add cold butter and mix until crumbly. Gradually add ice water until dough forms. Shape into a disc and chill for 20 minutes.
  3. Drain the apple juices into a saucepan. Add cornstarch mixed with a little water and cook until thickened. Remove from heat, stir in 1/2 stick butter, then mix back with apples.
  4. Roll out half the dough and place in a greased pie pan. Add apple filling. Roll out top crust, cover, trim, and seal edges.
  5. Brush top with egg wash and sprinkle sugar. Bake at 425°F (220°C) for 20 minutes. Then reduce to 375°F (190°C) for 30 minutes.
  6. Let the pie rest for at least 2 hours before slicing.
