Method
Prep the apples
- Toss sliced apples with sugar, salt, cinnamon, nutmeg, flour/cornstarch, and lemon juice.
- Let sit for 35 minutes to release juices.
Make the dough
- Mix flour, salt, baking powder, and sugar.
- Add cold butter and mix until crumbly.
- Gradually add ice water until dough forms.
- Shape into a disc and chill for 20 minutes.
Thicken the filling
- Drain the apple juices into a saucepan.
- Add cornstarch mixed with a little water and cook until thickened.
- Remove from heat, stir in 1/2 stick butter, then mix back with apples.
Assemble the pie
- Roll out half the dough and place in a greased pie pan
- Add apple filling
- Roll out top crust, cover, trim, and seal edges
Bake
- Brush top with egg wash and sprinkle sugar
- Bake at 425°F (220°C) for 20 minutes.
- Then reduce to 375°F (190°C) for 30 minutes.
Cool before serving
- Let the pie rest for at least 2 hours before slicing.
