For the Pizza Dough

  • 2 1/4 tsp instant yeast
  • 1 tsp granulated sugar
  • 1 cup warm water
  • 2 1/2 cups bread flour
  • 2 tbsp olive oil
  • 1 tsp salt
  • 4 tsp cornmeal, for dusting

For the Topping

  • 1/2 cup strawberry jam, or strawberry preserves
  • 8 fresh strawberries, sliced as desired
  • 1 cup mixed grapes, halved or sliced as desired
  • 2 ounces cream cheese, softened
  • 3 tbsp warm water, to thin the cream cheese

Directions

  1. In a mixing bowl, combine the instant yeast, granulated sugar, and warm water. Let it sit for about 10 minutes, or until the mixture becomes foamy.
  2. In a separate large bowl, add the bread flour, salt, and olive oil. Pour in the yeast mixture and stir until a soft dough forms. Knead the dough for about 5 minutes, then let it rest for 10 minutes.
  3. Divide the dough into 4 equal pieces. Place the dough on a lightly floured surface and flatten each piece into a small pizza crust. Transfer the crusts to lightly greased pizza pans that have been dusted with cornmeal.
  4. Bake in a preheated oven at 425°F for about 15 minutes, or until the crusts are cooked through and lightly golden. Remove from the oven and let them cool for about 5 minutes.
  5. Spread a layer of strawberry jam over each pizza crust. Arrange the sliced strawberries and grapes on top.
  6. In a small bowl, stir the softened cream cheese with warm water until smooth enough to drizzle. Drizzle it over the fruit pizzas and serve.
