Chimichurri. Just saying the name feels full of life, doesn't it? And very few dips or sauces can get people, hopefully like you, as excited as this one! Originating in Argentina, this glorious green sauce has gone from a home-made specialty to a must-have in kitchens all over the globe. It even has the superpower to really improve even the most basic food!

You'll experience a lovely bite from garlic and parsley, a gorgeous smell from oregano, and a zing from apple cider vinegar. This Chimichurri also pairs well with grilled meats, roasted veggies, or even a really good sandwich.

  • 2 bunches fresh parsley, finely minced
  • 5 to 6 garlic cloves, minced
  • 1/4 cup dried oregano
  • 1 cup warm water
  • 1 cup olive oil
  • 1 cup apple cider vinegar
  • salt, to taste
  • black pepper
  • 1 tsp crushed red pepper, optional

Directions

  1. Add the minced parsley and garlic to a large mixing bowl.
  2. In a separate small bowl, combine the dried oregano with warm water. Let it steep for at least 5 minutes to help bring out the flavor.
  3. Pour the oregano mixture into the bowl with the parsley and garlic.
  4. Add olive oil, apple cider vinegar, salt, black pepper, and crushed red pepper if using.
  5. Stir everything together until well combined.
  6. Cover and let the chimichurri sit for at least 3 hours. For best flavor, refrigerate it overnight.
  7. Serve with grilled meats, roasted vegetables, potatoes, sandwiches, or use it as a flavorful marinade.
