There is nothing quite like a Watermelon Popsicle on a hot day. This frozen treat is as much fun to eat as it is to look at, with its bright colors and refreshing quality. We put them together with some juicy blended watermelon, a layer of yogurt for creaminess and a kiwi topping to finish it off with a touch of sweetness. You don’t need any fancy techniques or anything complicated to make them; the ingredients are straightforward and let the fruit do the talking. A healthy way to go for a summer dessert or snack that both the kids and you will enjoy.

Ingredients
  

Watermelon Layer
  • 4 cups seedless watermelon cubed
Yogurt Layer
  • 1/2 cup Greek yogurt or vanilla
  • 1 to 2 tsp honey or maple syrup optional
Kiwi Layer
  • 1 large ripe kiwi peeled and chopped
  • 1 tsp honey or maple syrup optional

Equipment

  • 1 blender
  • 1 popsicle mold set
  • 6 popsicle sticks
  • 1 measuring cup
  • 1 mixing bowl
  • 1 spoon

Method
 

  1. Add the watermelon cubes to a blender and blend until smooth and liquid.
  2. Pour the watermelon juice into popsicle molds, filling each mold about three-fourths full. Leave a little space at the top for the yogurt and kiwi layers.
  3. Insert popsicle sticks and freeze for about 2 hours, or until the watermelon layer is partly firm.
  4. Mix the yogurt with honey or maple syrup, if using.
  5. Remove the molds from the freezer and spoon a small layer of yogurt over the watermelon layer.
  6. Freeze again for about 45 minutes, or until the yogurt layer is slightly firm.
  7. Blend the kiwi until smooth, adding a little honey or maple syrup if you want it sweeter.
  8. Pour the kiwi puree over the yogurt layer.
  9. Freeze for 4 hours, or until completely firm.
  10. To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the popsicles.
