Method
- Preheat oven to 350F (180°C) and line a baking sheet with parchment paper.
- Mix the 'Dry Ingredients' in a bowl. Set aside.
- Add butter and sugar to the bowl. Cream for 3 minutes until smooth.
- Mix in the eggs and vanilla extract until fully combined.
- Combine wet and dry ingredients until a dough forms.
- Place the dough in the fridge for 13 minutes.
- In a bowl, add a little sugar to coat the cookies.
- Scoop dough and toss in sugar.
- Place on a baking sheet and bake for 11-12 minutes at 350°F.
- Let the cookies cool for about 10 minutes. Sprinkle a little extra sugar on top if you like.

Tips for perfect cookies:
1. Don’t overbake—slightly soft centers = perfect chewy texture
2. Chilling the dough makes a big difference (don’t skip it!)
3. For extra flavor, you can add a pinch more vanilla or even a hint of lemon zest
