Fresh strawberry popsicles have a straightforward appeal. The berries are the star of this fruity frozen confection, which is little more than water, sugar and lemon juice. Put the fruit in a blender and it will give you a smooth, vivid mixture to be put in the freezer for a homemade pop that is as refreshing as it is easy to make. For any summer occasion they make a no-fuss dessert, or simply the perfect means of cooling down when the day is hot.

Ingredients
  

  • 4 cups fresh strawberries hulled
  • 3/4 cup water
  • 1/2 cup granulated sugar
  • 1/2 lemon juiced

Equipment

  • 1 blender
  • 1 measuring cup
  • 1 citrus juicer
  • 1 popsicle mold set
  • 8 popsicle sticks
  • 1 silicone spatula

Method
 

  1. Add the strawberries to a blender.
  2. Pour in the water, then add the granulated sugar and fresh lemon juice.
  3. Blend until smooth and pourable.
  4. Taste the mixture. Add a little more water if you want it less sweet, or a little more sugar if your strawberries are tart.
  5. Pour the strawberry mixture into popsicle molds, leaving a little space at the top for expansion.
  6. Insert popsicle sticks and freeze for about 6 hours, or until completely firm.
  7. To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the popsicles.

Notes

  1. Use ripe, sweet strawberries for the best flavor.
  2. For a lighter popsicle, reduce the sugar slightly or add a little extra water before blending.
