A plate of South African fried chicken is hard to beat. It’s all in the balance of comfort with a bit of a kick and some good texture. The breading is what you want here. Put together a straightforward mix of green chilies, cilantro and chili powder with some flour and a little milk. Once you have dredged the chicken in it and given the seasoning a chance to take hold, just fry it to a good golden brown. For an herby, home-style chicken that doesn’t require any fuss, this is the way to go.

Ingredients
  

  • 4 chicken thighs and drumsticks skinned
  • 2 green chilies finely chopped
  • 2 tbsp cilantro leaves chopped
  • 1 tsp chili powder
  • 1/2 cup fresh milk
  • 1 cup all-purpose flour
  • salt to taste
  • oil for frying
  • cilantro leaves for garnish

  • 1 mixing bowl
  • 1 small saucepan
  • 1 deep skillet
  • 1 tongs
  • 1 measuring cup
  • 1 measuring spoon
  • 1 paper towel-lined plate

Method
 

  1. Rub the chicken with chili, cilantro, chili powder, and salt.
  2. Heat the milk, add 1 tablespoon of flour. Stir over low heat until thickened. Remove from heat and mix with the chicken.
  3. Coat the chicken with the remaining flour.
  4. Fry the chicken in hot oil until golden brown and crispy.
