There is nothing like a good homemade scone to put on the table for breakfast or an afternoon pick-me-up. Lightly sweet and buttery, they are as unpretentious as they are tasty. The trick to the dough is in the cold butter for that crumbly, bakery feel, and a bit of sour cream to keep it tender. They are not long in the oven either, so when you are in the mood for something warm and home-baked but don’t want to put in too much effort, this is an easy recipe to turn to for brunch or otherwise.

Ingredients
  

Ingredients A (Sifted once)
  • 250 g self-rising flour
  • 3 tsp baking powder
  • 1/8 tsp salt
Ingredients B
  • 50 g caster sugar
  • 120 g cold butter cubed
Ingredients C
  • 150 ml sour cream
Ingredients D
  • milk for brushing

Equipment

  • 1 mixing bowl
  • 1 flour sifter or fine-mesh strainer
  • 1 measuring scale
  • 1 measuring spoon set
  • 1 measuring cup
  • 1 pastry cutter or clean hands
  • 1 round cutter or round mold
  • 1 pastry brush
  • 1 baking sheet
  • 1 oven
  • 1 cooling rack

Method
 

  1. Combine Ingredients A and B in a bowl. Rub together with your hands until the mixture resembles breadcrumbs.
  2. Make a well in the center of the mixture, then add the sour cream. Mix.
  3. Flatten the mixture and press into a round mold.
  4. Brush the surface of the scone with milk.
  5. Bake at 200°C for 9 minutes.
