Ingredients
  

  • 2 cup mashed potatoes
  • 3/4 cup all-purpose flour
  • 1 egg
  • 1 large onion diced
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • sliced cucumber as needed
  • cherry tomatoes as needed

  • 1 large bowl
  • 1 skillet
  • 1 mixing spoon
  • 1 slotted spoon
  • paper towels

Method
 

  1. Place all ingredients in a large bowl and mix well until a batter forms.
  2. Heat 1/2 cup of oil in a skillet over medium heat.
  3. Scoop a small spoonful of the batter and drop it into the hot oil. Fry until golden brown (about 5 minutes per side).
  4. Remove the potato pancakes with a slotted spoon and place them on paper towels. Repeat until all the batter is used up. 
  5. Lastly, serve the Potato Pancakes with sliced cucumber and cherry tomatoes.
