There is something lovely about a good steamed Orange Cake for teatime or when you have the family over. With its soft, sweet and faintly citrusy profile, it is a no-fuss homemade dessert. You put together eggs, caster sugar, corn oil, orange starch and some self-rising flour to make it. The steaming gives the cake a moist, tender quality and an understated orange taste. It is the kind of bright, home-made cake that is easy to put on the table without firing up the oven, and simple enough for those who are just starting out in the kitchen.

Ingredients
  

  • 3 eggs
  • 1 cup caster sugar
  • 1 cup corn oil
  • 1/2 cup orange starch
  • 2 cup self-raising flour sifted

Equipment

  • 1 large mixing bowl
  • 1 measuring cup set
  • 1 sifter
  • 1 electric hand mixer
  • 1 rubber spatula
  • 1 greased baking pan
  • 1 pressure cooker or multi-cooker
  • 1 steaming rack
  • 1 clean kitchen towel
  • 1 cooling rack

Method
 

  1. Place all ingredients except self-rising flour in a bowl and beat until well blended.
  2. Add self-rising flour and beat until well blended.
  3. Pour into a greased baking pan.
  4. Place a clean kitchen towel in the pot. Add the rack and water to the pot.
  5. Place the baking pan on the rack inside the pot and cover the pot.
  6. Set the button to 'STEAM'. Press 'STEAM' for 30 minutes and ON.
  7. When the pot beeps, press 'OFF'. Release the pressure. When there is no hissing sound, slowly open the pot lid. Cool the cake before serving.
  8. Now the Orange Cake is ready to be served.
