You can’t go wrong with an M&M Cookie. They are soft and buttery, with a colorful bit of candy in every bite. Our no-fuss recipe for these homemade cookies yields a nice chewy texture, the kind with a lightly golden edge and a soft middle. They are just the thing for a lunchbox, to have at a party or for the kids, or as an unpretentious sweet snack. Not much is required in the way of pantry staples and they don’t need long to chill, so they are as enjoyable to put together as they are to pass around.

Ingredients
  

  • 2 cups M&M candies
  • 3/4 cup unsalted butter softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar or superfine sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp fine salt

  • 1 electric hand mixer or stand mixer
  • 1 spatula
  • 1 measuring cup set
  • 1 measuring spoon set
  • 1 baking sheet
  • 1 sheet parchment paper
  • 1 Cookie Scoop or spoon
  • 1 wire cooling rack
  • 1 oven

Method
 

  1. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light, creamy, and fluffy.
  2. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  3. Add the all-purpose flour, baking soda, and salt. Stir with a spatula until a soft cookie dough forms.
  4. Fold in the M&M candies until evenly mixed throughout the dough.
  5. Cover the dough and chill it in the refrigerator for 30 minutes.
  6. Preheat the oven to 350°F (180°C). Lightly grease a baking sheet or line it with parchment paper.
  7. Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 11 minutes, or until the edges are lightly golden and the centers still look slightly soft.
  9. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes.
  10. Transfer the cookies to a wire rack and cool completely before serving.

Notes

  1. For softer cookies, do not overbake them. The centers may look slightly underdone when they come out of the oven, but they will continue to set as they cool.
  2. For a bakery-style look, press a few extra M&M candies on top of each cookie dough scoop before baking. You can also use seasonal M&M colors for holidays, birthdays, or party trays.
