Mini Frozen Yogurt Popsicles

There is something very refreshing about a mini frozen yogurt popsicle. With a blend of vanilla Greek yogurt, honey and berries studded with crunchy granola, you get a creamy, fruity treat. In some ways they are the equivalent of a little yogurt parfait on a stick. Which is to say they are ideal for a summer snack or as an after-school thing for the kids, not to mention a light dessert you can have ready to go.

Ingredients
  

  • 1 cup vanilla Greek yogurt
  • 1/2 cup granola
  • 1/2 cup strawberries finely chopped
  • 1/2 cup blueberries
  • 2 to 3 tbsp honey

Equipment

  • 1 medium mixing bowl
  • 1 mixing spoon or spatula
  • 1 measuring cup set
  • 1 measuring spoon set
  • 1 mini popsicle mold
  • 10 mini popsicle sticks
  • 1 freezer

Method
 

  1. Add the vanilla Greek yogurt and honey to a medium bowl.
  2. Stir until smooth and creamy. Taste and add a little more honey if you prefer sweeter popsicles.
  3. Gently fold in the chopped strawberries and blueberries.
  4. Spoon a small amount of granola into the bottom of each mini popsicle mold.
  5. Add the yogurt and berry mixture into the molds, filling each one almost to the top.
  6. Sprinkle a little extra granola on top, if desired.
  7. Insert popsicle sticks and freeze overnight, or for at least 8 hours, until fully firm.
  8. To unmold, run the outside of the popsicle molds under warm water for a few seconds, then gently pull out the popsicles.
  9. Serve frozen and enjoy right away.

Notes

  1. Use thick Greek yogurt for the creamiest texture.
  2. Fresh berries work best, but frozen berries can also be used if they are chopped small.
  3. If your vanilla yogurt is already sweet, start with 2 tablespoons / 42 g of honey and adjust to taste.
