Add the vanilla Greek yogurt and honey to a medium bowl.
Stir until smooth and creamy. Taste and add a little more honey if you prefer sweeter popsicles.
Gently fold in the chopped strawberries and blueberries.
Spoon a small amount of granola into the bottom of each mini popsicle mold.
Add the yogurt and berry mixture into the molds, filling each one almost to the top.
Sprinkle a little extra granola on top, if desired.
Insert popsicle sticks and freeze overnight, or for at least 8 hours, until fully firm.
To unmold, run the outside of the popsicle molds under warm water for a few seconds, then gently pull out the popsicles.
Serve frozen and enjoy right away.
