For a healthy popsicle on a warm day, there is the Kiwi Ice Popsicle. These frozen treats are as light and refreshing as they are fruity. We put together this simple recipe with cold water, a touch of honey, chia seeds and some ripe kiwi to give it a bright sweet-tart taste and an enjoyable texture from the chia. It is an easy way to have a snack or put down a dessert that is entirely fruit-based.

Ingredients
  

  • 2 ripe kiwis peeled and chopped
  • 1/4 cup cold water
  • 1 to 2 tsp honey or to taste
  • 2 tsp chia seeds

Equipment

  • 1 blender
  • 1 cutting board
  • 1 knife
  • 1 measuring cup
  • 1 measuring spoon set
  • 1 small bowl
  • 1 spoon
  • 1 popsicle mold set
  • 4 popsicle sticks

Method
 

  1. Add the chopped kiwis, cold water, and honey to a blender.
  2. Blend until smooth and pourable.
  3. Place the chia seeds in a small bowl.
  4. Pour the blended kiwi mixture over the chia seeds and stir well.
  5. Let the mixture sit for about 5 minutes so the chia seeds can slightly thicken.
  6. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  7. Insert popsicle sticks and freeze for at least 6 hours, or overnight, until fully firm.
  8. To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the popsicles.

Notes

Use ripe kiwis for a naturally sweeter flavor. If your kiwis taste tart, add a little more honey before freezing. Avoid honey for babies under 1 year old.
