Wash the apples well, then cut them into cubes or slices. Remove the seeds and core.
Add the apples to a pot with 1 liter of water.
Bring to a boil, then lower the heat and simmer for 15 minutes, or until the apples are soft.
Let the mixture cool slightly.
Blend the cooked apples together with the cooking water until smooth.
Strain the mixture through a fine mesh sieve or cheesecloth. Strain again if you want a cleaner, smoother juice.
Stir the juice well, then pour it into a glass jar or container.
Chill in the fridge until cold.
Once cold, stir in honey if you want it sweeter. Add lemon juice if you want a fresher taste.
Serve cold with ice, or enjoy it plain.
