There is no better way to put an appetizer on the table than with a good Grilled Cheese. We make them to be just that: warm, buttery pieces of soft brioche heaped with Gruyère and cheddar for all the cheese you could want. Our method is to pan-fry the sandwich to get a nice golden hue before we put it in the oven for a few minutes to let the cheese inside melt properly. You will find it is the kind of unpretentious, satisfying fare you want at hand for a party or to put on a brunch board, whenever you are in the mood for something with a bit more to it than your average starter.

Ingredients
 
 

  • 4 slices brioche bread
  • 2 oz Gruyère cheese thinly sliced
  • 2 oz cheddar cheese thinly sliced
  • 2 tbsp unsalted butter for pan-frying
  • 2 tsp unsalted butter for topping before baking

Equipment

  • 1 oven
  • 1 large skillet
  • 1 sheet pan
  • 1 spatula
  • 1 butter knife
  • 1 cutting board
  • 1 sharp knife

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Divide the Gruyère and cheddar evenly between 2 slices of brioche bread. Top with the remaining bread slices to form 2 sandwiches.
  3. Melt 2 tablespoons butter in a large skillet over medium heat.
  4. Add the sandwiches to the skillet and cook for about 1 minute 30 seconds, or until the bottom is golden brown.
  5. Flip the sandwiches and cook the other side for 40 seconds, just until lightly golden.
  6. Transfer the sandwiches to a sheet pan. Spread 1 teaspoon butter over the top of each sandwich.
  7. Bake for 4 minutes, or until the cheese is fully melted.
  8. Slice in half and serve warm.

Notes

  1. For the best texture, keep the heat at medium so the brioche turns golden without burning. Gruyère adds a nutty, creamy flavor, while cheddar gives the sandwich that classic, sharp, melty grilled cheese taste.
  2. Serve with tomato soup, a simple salad, or pickles for an easy lunch or cozy dinner.
