Frozen Banana Cereal Popsicles are a fun, quick treat made with ripe bananas, melted chocolate, and crunchy cereal. Each banana half is dipped in chocolate, coated with cereal, and chilled until the shell sets. They are sweet, crunchy, refreshing, and easy enough for kids’ snacks, parties, or a simple no-bake dessert.

Ingredients
 
 

  • 4 medium bananas ripe but firm
  • 2 tbsp fresh lemon juiced
  • 8 oz semisweet chocolate chips or chocolate melting wafers, melted
  • 1 tbsp coconut oil or vegetable oil optional, for smoother chocolate
  • 1 1/2 cups cereal of choice lightly crushed
  • 8 wooden popsicle sticks

  • 1 wire rack
  • 1 tray
  • 1 kitchen knife
  • 1 cutting board
  • 1 pastry brush
  • 1 paper towel
  • 8 wooden popsicle sticks
  • 2 shallow bowls
  • 1 microwave-safe bowl
  • 1 spoon
  • 1 tall glass

Method
 

  1. Line a baking sheet with parchment paper or place a wire rack over a tray.
  2. Peel the bananas and cut each one in half crosswise to make 8 short banana logs.
  3. Lightly brush or drizzle the banana pieces with fresh lemon juice to help prevent browning. Pat them dry with paper towels so the chocolate sticks better.
  4. Insert a wooden popsicle stick into the cut side of each banana half.
  5. Add the cereal to shallow bowls or small plates.
  6. Melt the chocolate chips or melting wafers in the microwave in 25 seconds intervals, stirring between each one until smooth. Stir in the coconut oil, if using. Pour the melted chocolate into a tall glass for easier dipping.
  7. Dip each banana pop into the melted chocolate, letting the excess drip off.
  8. Immediately roll or sprinkle the chocolate-covered banana pop with cereal.
  9. Place the banana pops on the prepared rack or baking sheet. Let the chocolate firm up at room temperature, or chill for about 10 minutes.
  10. Serve right away for the best texture.

Notes

  1. Firm bananas work best here. Very ripe bananas can be too soft and may slide off the popsicle sticks.
  2. For the cereal, you can use crispy rice cereal, cornflakes, granola, Fruity Pebbles-style cereal, crushed Cheerios, or any crunchy breakfast cereal you like.
