There is nothing like a good homemade fried donut to be soft, fluffy and sweet. We make ours from a yeast dough that has been put through its paces with butter, egg and milk powder to give it the kind of tender texture you would expect from the bakery. Once they have had time to rise we deep-fry them to a nice golden colour before rolling them in fine and powdered sugar for a simple, sugary finish that is hard to resist.

Ingredients
  

Ingredients A
  • 480 g bread flour
  • 11 g instant yeast
  • 120 g plain flour
  • 12 g baking powder
  • 36 g milk powder
  • 9 g bread improver
  • 6 g salt
  • 70 g sugar
  • 1 egg
  • 296 g cold water
Ingredients B
  • 72 g butter
Ingredients C
  • 1/2 cup fine granulated sugar
  • 1/2 icing sugar

Equipment

  • 1 stand mixer with dough hook
  • 1 large mixing bowl
  • 1 kitchen scale
  • 1 donut cutter
  • 1 baking sheet or tray
  • 1 clean kitchen towel or plastic wrap
  • 1 deep pot or deep fryer
  • 1 slotted spoon or spider strainer
  • 1 cooling rack
  • 1 shallow bowl for sugar coating
  • 1 cooking thermometer optional

Method
 

  1. Beat Ingredients A at low speed with the hook attachment until the dough does not stick to the mixing bowl.
  2. Add butter and continue to beat until the dough becomes shinny and elastic. Rest the dough for 10 minutes.
  3. Divide the dough into 60g each and cut out with a donut cutter.
  4. Let it rise until double in size about 45 minutes.
  5. Deep-fry donuts in hot oil until golden brown.
  6. When cold, coat with fine granulated sugar and icing sugar.
