A good Cake Pop has its merits. They are a fun way to have your dessert, what with the soft cake crumbs and sweet buttery mix that is all wrapped up in a layer of melted chocolate and finished off with some colorful sprinkles. You can put them together without much trouble, so they make for a fine homemade indulgence or something to have ready for a birthday, party or bake sale. Just one bite will tell you with the chocolate shell giving way to the soft cake within and a pleasant sprinkle to top it off.

Ingredients
  

Ingredients A
  • 1/4 stick unsalted butter
  • 1/2 cup powdered sugar
  • 1 tsp cream
  • 1/4 tsp vanilla extract
Ingredients B
  • 2 cup cake crumbs
  • 2 cup semisweet chocolate chips
  • 1 cup mixed sprinkles
  • lollipop sticks as needed

Equipment

  • 1 mixing bowl
  • 1 electric hand mixer
  • 1 spatula
  • 1 baking sheet or tray
  • 1 microwave-safe bowl
  • 1 microwave
  • 1 cooling rack
  • 1 spoon
  • 18 lollipop sticks

Method
 

  1. Beat Ingredients A until well combined. Put in cake crumbs and mix well.
  2. Shape the batter into 1-inch balls and arrange them on a tray. Cool in the refrigerator.
  3. Microwave chocolate chips until melted. Dip about 1 inch of the lollipop sticks into the melted chocolate and carefully insert into the cake balls.
  4. Allow to cool and set in the refrigerator again for 10 minutes. Submerge the cake balls into melted chocolate and place on a rack to drain excess chocolate. Roll the cake balls over sprinkles.
