Method
- Preheat your oven to 170°C.
- In a mixing bowl, beat the softened butter and caster sugar together until pale and creamy.
- Mix in the self-raising flour, then use your hands to bring everything together into a soft dough.
- Lightly dust your work surface with caster sugar. Roll the dough slightly, then shape it into balls about the size of a walnut.
- Place the dough balls on a baking tray. Dip a fork into a little oil, then gently press each biscuit to flatten slightly and create a smooth top.
- Bake at 170°C, then reduce the temperature to 160°C and continue baking for about 15 minutes, or until the biscuits are golden.
- Let the biscuits cool on the tray for a few minutes before moving them to a wire rack.
