Berry Lime Popsicles are bright, fruity, and refreshing frozen treats made with mixed berries, fresh lime juice, cold water, and a little maple syrup or honey. They blend up quickly, freeze into a sweet-tart popsicle, and make a simple no-cook dessert or snack for warm days.

Ingredients
  

  • 1 cup mixed berries fresh or frozen
  • 1/4 cup fresh lime juice
  • 1/2 cup cold water
  • 2 tsp maple syrup or honey

Equipment

  • 1 blender
  • 1 measuring cup
  • 1 measuring spoon set
  • 1 popsicle mold tray
  • 4 popsicle sticks
  • 1 spoon

Method
 

  1. Add the mixed berries, lime juice, water, and maple syrup or honey to a blender.
  2. Blend until smooth and pourable.
  3. Taste the mixture and add a little more sweetener if the berries are too tart.
  4. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Insert popsicle sticks and freeze for 5 hours, or until completely firm.
  6. To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the popsicles.

Notes

Strain the blended mixture through a fine-mesh sieve before pouring it into the molds for a smoother popsicle, or leave it unstrained for a fruitier texture.
