You can put together a no-fuss frozen snack with banana popsicles. All you need are some ripe bananas and Greek yogurt, a touch of maple syrup or honey to sweeten them up, and perhaps a dash of vanilla if you like. Put it in the blender and it will be as smooth as any banana smoothie, once you have them in the freezer they turn into something quite creamy. They make for a refreshing, lightly sweet pop that is an easy way to have a healthier dessert or a summer treat the kids will enjoy.

Ingredients
  

  • 3 medium ripe bananas peeled
  • 1 cup Greek yogurt
  • 2 tsp pure maple syrup or honey
  • 1 tsp vanilla extract optional

Equipment

  • 1 blender
  • 1 measuring cup
  • 1 measuring spoon set
  • 1 rubber spatula
  • 1 popsicle mold
  • 6 popsicle sticks

Method
 

  1. Add the peeled bananas, Greek yogurt, maple syrup or honey, and vanilla extract to a blender.
  2. Blend until smooth and creamy, scraping down the sides if needed.
  3. Taste the mixture and add a little more maple syrup or honey if you prefer it sweeter.
  4. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Insert popsicle sticks and freeze for 6 hours, or until completely firm.
  6. To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the popsicles.

Notes

  1. Use bananas with plenty of brown spots for the sweetest flavor.
  2. Add a pinch of cinnamon or a spoonful of peanut butter for extra flavor.
