Add the avocado flesh, coconut milk, honey, optional lime juice, and a small pinch of salt to a blender.
Blend until completely smooth and creamy. Scrape down the sides as needed so no avocado chunks remain.
Taste the mixture. Add a little more honey if you prefer sweeter popsicles.
Pour the avocado coconut mixture into popsicle molds, leaving a little space at the top.
Insert popsicle sticks into each mold.
Freeze for at least 4 hours, or overnight for the firmest texture.
To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the popsicles.
Serve cold and enjoy right away.
