You can’t beat an Avocado Coconut Popsicle for a bit of relief when the day is warm. The combination of ripe avocados, some honey and canned coconut milk makes for a frozen confection that is every bit as creamy as it is refreshing, while a dash of lime juice puts a nice bright note in there. It is all natural tropical sweetness with a smoothness to it. An easy recipe to put together and have on hand in the freezer, they make for a fine quick snack or a light dessert.

Ingredients
  

  • 4 small ripe avocados peeled and pitted
  • 1 cup canned coconut milk
  • 2 tbsp honey
  • 1 tbsp fresh lime juice optional for brightness
  • 1 pinch fine salt optional

Equipment

  • 1 blender
  • 1 spatula
  • 1 measuring cup
  • 1 measuring spoon set
  • 1 popsicle mold set
  • 8 popsicle sticks

Method
 

  1. Add the avocado flesh, coconut milk, honey, optional lime juice, and a small pinch of salt to a blender.
  2. Blend until completely smooth and creamy. Scrape down the sides as needed so no avocado chunks remain.
  3. Taste the mixture. Add a little more honey if you prefer sweeter popsicles.
  4. Pour the avocado coconut mixture into popsicle molds, leaving a little space at the top.
  5. Insert popsicle sticks into each mold.
  6. Freeze for at least 4 hours, or overnight for the firmest texture.
  7. To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the popsicles.
  8. Serve cold and enjoy right away.

Notes

  1. Use full-fat canned coconut milk instead of a coconut milk beverage for a creamier popsicle.
