You can’t beat a proper homemade Alfredo for what you put on the table. It is one of the simplest stovetop sauces to make, yet it has that rich, creamy mouthfeel with just the right amount of garlicky Parmesan. You just let the butter, garlic, heavy cream and a good grating of Parmesan do their work until you have a smooth, comforting sauce that clings to your pasta in all the right ways. For a weeknight dinner it is easy to throw together, but it still has a special, cozy feel to it.

Ingredients
 
 

  • 1/2 stick butter
  • 1 tbsp minced garlic
  • 2 cups heavy cream
  • 2 cups grated Parmesan cheese
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 tsp Italian seasoning or to taste
  • 1 tsp garlic powder or to taste
  • 12 oz pasta

Equipment

  • 1 large skillet or sauté pan
  • 1 pasta pot
  • 1 colander
  • 1 measuring cup
  • 1 tablespoon
  • 1 wooden spoon or silicone spatula
  • 1 cheese grater
  • 1 pair of tongs

Method
 

  1. In a pan over medium heat, melt the butter and sauté the minced garlic until browned.
  2. Pour in the 2 cups of heavy cream and let it gently warm up.
  3. Add 2 cups of Parmesan cheese and stir well to combine.
  4. Sprinkle in salt, pepper, Italian seasoning, and garlic powder to your liking.
  5. Lower the heat to low–medium and stir continuously for about 10 minutes, allowing the cheese to melt slowly and the sauce to thicken.
  6. Toss in your cooked pasta and mix until everything is coated in that creamy sauce.

Notes

  1. Add a little extra Parmesan if you love it extra cheesy.
  2. Stir in about 1/3 cup of pasta water to loosen the sauce and make it silky smooth.
