Ingredients
4 tbsp cooking oil
1 egg, Extra-Large (XL)
1 ½ cups self-rising flour
1 tsp baking powder
3 tbsp sugar
2 tbsp sweetened condensed milk
1 cup fresh milk, or liquid milk
1 tbsp mayonnaise
A pinch of salt


Combine all ingredients in a blender and blend until smooth. Let the batter rest for 10 minutes.
Pour a ladleful of batter into a preheated nonstick pan. Flip when bubbles appear on the surface (wait until the surface is dry before flipping).
Let it cook briefly, then remove. Serve hot.
These fluffy pancakes are delicious on their own. They're perfectly sweet and rich. You can also add classic syrups, fresh fruits, or hearty protein sides, if you'd like.
