There is something undeniably festive about a Rainbow Cake. This steamed variety is as pretty as it is sweet, with a colorful appearance that comes from the way you layer the different batters in the pan before steaming them to a soft, fluffy finish. The recipe calls for corn oil, condensed milk, eggs, caster sugar, vanilla and self-rising flour. It makes for an enjoyable dessert on a birthday or at a family get together, or even just for tea time. And since you don’t need to fire up the oven, it is a cheerful homemade treat you can have any day of the week.

Ingredients A
  • 1 cup corn oil
  • 1 cup sweetened condensed milk
  • 3/4 cup caster sugar
  • 1 tsp cake emulsifier
  • 5 eggs
  • 1 tsp vanilla extract
Ingredients B
  • 2 cup self-rising flour sifted
  • a little red food coloring
  • a little yellow food coloring
  • a little green food coloring

Equipment

  • 1 large mixing bowl
  • 1 hand mixer
  • 1 wooden spoon
  • 3 small bowls
  • 1 measuring cup
  • 1 measuring spoon set
  • 1 spatula
  • 1 baking pan
  • 1 sheet parchment paper
  • 1 clean kitchen towel
  • 1 pressure cooker or electric multi-cooker
  • 1 steaming rack
  • 1 cooling rack

Method
 

  1. Put all Ingredients A into a bowl and beat until smooth.
  2. Add the self-rising flour and stir with a wooden spoon until smooth.
  3. Divide the batter into 3 separate bowls.
  4. Add a different color to each bowl and mix well.
  5. Spoon one of the colored mixtures into a baking pan lined with parchment paper.
  6. Spoon another color on top of the first mixture.
  7. Add another different color and repeat layering until all mixtures are used.
  8. Place a clean kitchen towel in the pot. Add the rack and water to the pot.
  9. Place the baking pan on the rack inside the pot and cover the pot.
  10. Turn the knob to 'STEAM'. Press 'STEAM' for 30 minutes, then press 'ON'.
  11. When the pot beeps, release the 'PRESSURE'. If there is no beeping sound, press 'OFF' and slowly open the pot lid. Cool the cake before serving.
