Ingredients
  

  • 4 cup fragrant rice
  • 1 cup glutinous rice
  • 4 cup water
  • 1 cup thick coconut milk
  • 3 shallots sliced
  • 1 inch ginger sliced
  • 1 tbsp fenugreek seeds
  • salt to taste

Method
 

  1. Wash the fragrant rice and glutinous rice. Soak the glutinous rice for 30 minutes and rinse.
  2. Add the fragrant rice, glutinous rice, and water to the pot.
  3. Cover the pot. Adjust the knob to 'PRESSURE'. Press High Pressure for 3 minutes and turn it 'ON'.
  4. When the pot beeps, adjust the knob to 'STEAM' and release the pressure steam. When there is no hissing sound, press 'OFF' and slowly open the pot's lid.
  5. In a bowl, stir together the thick coconut milk, sliced ingredients, fenugreek, and salt. Add the mixture to the pot and stir to combine.
  6. Cover the pot. Adjust the knob to 'Steam'. Press Steam for 3 more minutes and 'ON'.
  7. When the pot beeps, press 'OFF'. Let it rest for about 5 more minutes, then fluff with a fork.
  8. Serve with tuna or chicken stew and pickled cucumber.
