Antipasto skewers make for an easy party appetizer. Just thread on some cheese tortellini, salami and pepperoni, fresh mozzarella, artichoke hearts, Kalamata olives, grape tomatoes, and a bit of basil. Each skewer has a nice mix of creamy, salty, tangy, and fresh flavors, with a little balsamic glaze on top for a sweet-savory finish. You have a colorful platter to show for very little cooking, which is why they are well-suited to a potluck or holiday get-together, or even a picnic. Ingredients
 
 

  • 9 oz cheese tortellini refrigerated, cooked and cooled
  • 12 oz fresh mozzarella balls drained
  • 6 oz beef salami folded
  • 4 oz pepperoni slices
  • 1 cup marinated artichoke hearts drained and cut into bite-size pieces
  • 1 cup pitted Kalamata olives
  • 1 pint grape tomatoes
  • 24 fresh basil leaves
  • 2 to 3 tbsp balsamic glaze
For serving
  • 24 small wooden skewers or appetizer picks
  • 1 large serving platter

Method
 

  1. Cook the cheese tortellini according to the package directions. Drain, rinse gently with cool water, and let it cool completely.
  2. Drain the mozzarella balls, artichoke hearts, and olives well. Pat them dry with paper towels so the skewers do not become watery.
  3. Thread each skewer with one grape tomato, one basil leaf, one mozzarella ball, one piece of folded Genoa salami, one cheese tortellini, one pepperoni slice, one Kalamata olive, and one piece of marinated artichoke heart. Repeat until all skewers are filled.
  4. Place the finished skewers on a large platter. Drizzle lightly with balsamic glaze just before serving.
  5. Serve chilled or at room temperature as an easy appetizer, party snack, or antipasto platter-style bite.

Notes

  1. For the best flavor, use refrigerated cheese tortellini instead of dried tortellini because it has a softer texture and cooks quickly.
  2. You can assemble the skewers a few hours ahead of time. Keep them covered in the refrigerator, then drizzle with balsamic glaze right before serving.
  3. If using long skewers, cut them in half or use fewer pieces per skewer for easier serving.
