Potato Pancake

 2 cups mashed potatoes
 ¾ cup all-purpose flour
 1 egg
 1 large onion, diced
 ½ tsp ground black pepper
 ½ tsp salt
 Sliced cucumber and cherry tomatoes, as needed

Place all ingredients in a large bowl and mix well until a batter forms.

Heat ½ cup of oil in a skillet over medium heat.

Scoop a small spoonful of the batter and drop it into the hot oil. Fry until golden brown (about 5 minutes per side).

Remove the potato pancakes with a slotted spoon and place them on paper towels. Repeat until all the batter is used up.

Lastly, serve the Potato Pancake with sliced cucumber and cherry tomatoes.
